Rooted in legend and tradition, Mucha Tie Guan Yin—the “Iron Goddess of Mercy”—is a roasted Wulong tea from the hills of Mucha, Taiwan. Its story traces back to a humble farmer, Wei Yin, who was guided by the goddess Guan Yin to discover a hidden tea tree bearing leaves “as heavy as iron.”

Still cultivated today by Mr. Gao, whose family has carried this craft since 1875, this tea is slow-roasted over several days to reveal extraordinary depth and character. Lao transforms this rare and storied leaf into an elegant sparkling infusion — a true tribute to heritage and mastery.

Each bottle of Mucha Tie Guan Yin begins with a fermented tea base, aged for over three months to develop natural structure, balanced acidity, and deep complexity.

To this foundation, we add a dual infusion — hot and cold, steeped for 48 hours — of whole-leaf Tie Guan Yin, a baked wulong grown at 800 m elevation in the Mucha region of Taiwan.

This precise process draws out the tea’s toasted aromas, candied citrus notes, and bold, rustic character.

A small amount of organic cane sugar is then added, not to sweeten, but to support balance and mouthfeel.

Finally, the blend is gently carbonated and pasteurized.

No added flavours. No preservatives.

Just tea, in all its depth.

Appearance: Slightly oily, delicate robe, distinctly sparkling.

Aroma: An intense bouquet of raw cocoa mingles with subtle hints of tangerine.

Palate: An invigorating citrus attack, supported by distinguished roasted notes, leaving a slight astringency on the palate reminiscent of red grape skin.

Poured into a champagne flute, Mucha Tie Guan Yin reveals its depth alongside bold, fire-kissed dishes.
