We started working on the mule a while ago. We knew we wanted it spicy, like really spicy. People who love ginger seem to looooove the heat. We tried a bunch of different chilis but were not satisfied with the result. During our last vacation in Mexico, we discovered the Morita pepper. They’re basically Jalapeno peppers that were left to ripe on the plant and then lightly smoked. They are fruity with a lot of depth. We came back home and tested right away, and there it was, the perfect touch to highlight and support all the ginger flavors.
